The OFDS Enrichment Program—administered by the Council of American Overseas Research Centers (CAORC) in partnership with the Americas Research Network (ARENET)—offers a two-week, academically grounded international seminar in Mexico. The 2027 program, "Agriculture, Food Systems, and Cultural Heritage in Mexico," is based in Mexico City, Puebla, and Oaxaca. It provides participants with immersive, place-based learning experiences through lectures, site visits, workshops, and cultural engagement with local experts, chefs, farmers, and community organizations. The curriculum explores Mexican cuisine, agricultural knowledge, migration, and cultural heritage, with an emphasis on interdisciplinary approaches and the development of curriculum and research projects. Participants are expected to implement a project at their home institution post-seminar.
